Happy Thanksgiving!

On behalf of our staff at Cumberland Valley Heating and Air Conditioning, we wish you and your family a wonderful, safe and happy Thanksgiving!

This year, Cumberland Valley is especially thankful for our loyal customers who continue to trust us with their home comfort. We are thankful for being able to serve the tri-state region and we are thankful being part of a great community!

Many families will celebrate Thanksgiving tomorrow and will enjoy the traditions that make Thanksgiving special. What are your favorite traditions? What makes your Thanksgiving special? Which Thanksgiving dish is your favorite? Do you have a special recipe you wish to share? What are your family traditions? Football in the afternoon? A game of flag football after you eat? Sleeping off the turkey and leftovers the next day?

While many families will be celebrating this holiday together, we want to thank our men and women serving in uniform in our Armed Services who will not be with their families tomorrow. These men and women are our unsung heroes, and we thank them for serving us and defending our freedoms at home and abroad.

We want to share two of our favorite Thanksgiving recipes:

1) Baked Corn: 

Ingredients

  • 3 cans of corn
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1 C. nonfat milk
  • 1/8 teaspoon black pepper
  • 2 teaspoons sugar
  • 3 tablespoons flour

Directions

  • In a large bowl, combine all the ingredients and mix well
  • Carefully pour into a 9 x 13 inch baking dish, sprayed with cooking spray
  • Bake in oven at 350 degrees for 45 minutes

2) Old Fashioned Peanut Butter Pie: 

Ingredients

  • 1 C. sugar
  • ½ C. creamy peanut butter
  • 1 pastry shell (9in.) baked
  • 2/3 C. sugar
  • ¼ C. cornstarch
  • 2 C. milk
  • 3 eggs, separated
  • ¼ teaspoon salt
  • 3 tablespoons butter
  • ¼ teaspoon vanilla

Directions

  • Place 1 C. sugar in small bowl. Cut in peanut butter until crumbly. Spread half of mixture in pastry shell.
  • In a large saucepan, combine the 2/3 C. sugar and cornstarch. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in butter and vanilla; set aside.
  • In a small bowl, beat egg whites until stiff peaks form. Spread reserved custard evenly over peanut butter mixture. Spread meringue over hot filling, sealing edges to crust. Sprinkle with reserved peanut butter mixture. Bake at 350 degrees for 10 minutes or until the meringue is golden brown. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Store leftovers in the refrigerator. Yield: 8-10 servings.
